EXKLUSIV C90 - hand-forged unique pieces made of real Damascus steel

The knives of the EXKLUSIV C90 series are the entry into the Nesmuk EXKLUSIV world of hand-forged Damascus steel. The blade of the chef's knife consists of 210 layers and has a hardness of 61 to 62 HRC. Like all Nesmuk Damascus blades, they are also made in the company's own forge.

The best tool steels with high carbon content and rare metals such as wolfram, create blades with the finest sharpness and a longer durability.

Unlike the EXCLUSIVE C100 and C150 series, the blades are machine ground. The chef's knives in the C90 series have a hollow grind on one side, which is also typical of Nesmuk JANUS and SOUL chef's knives. The slicer and office knives have a very thin wedge grind, which is perfect for filleting, paring or peeling.

The handmade Damascus steel is superior in terms of puncto cutting ability and sharpness to the knives of the SOUL and JANUS series made of patented niobium steel. Here, carbon steels still have an advantage over stainless steels. And thanks to the glass-like NPC coating (Nesmuk Protective Coating) developed together with the Fraunhofer Institute for Chemical Technology, the Nesmuk EXKLUSIV blades are also protected against corrosion*.

The lightest damask knife from Nesmuk

Genuine, hand-forged Damascus - and still unusually light: the hollow grind applied to 210 layers of Damascus on one side creates the unique look and outstanding cutting properties of the hand-forged blade. At only about 130 g, depending on the handle material, the EXKLUSIV C90 chef's knife is the lightest knife in the collection. The 180 mm long blade makes the knife an all-rounder in every kitchen. Carbon content: 0.9%.

One-sided hollow grinding, the hand-forged Damascus unfolds its full potential: the combination of very fine carbon steel and extremely thin blade creates a sharpness experience that is second to none.

Forged by master craftsmen

The craftsmanship of genuine Damascus steel is evident in the different appearance of the Damascus pattern: the back of the blade is plane ground and reveals a different view of the Damascus structure than the hollow ground front.

*The cutting edge of the blade is not coated. Therefore, you should always clean your Nesmuk EXKLUSIV knife after use. Clean the blade with dish soap and under running water, dry well afterwards. For special care, it is also suitable to oil the blade or the cutting edge from time to time. We recommend acid-free oils such as our camellia oil.

Please do not use cleaning sponges with abrasive fabrics, these can scratch and damage the NPC coating. Also avoid soaking dried-on cutting debris and do not place the knife in a water bath. Cleaning in a dishwasher will damage any kitchen knife, but especially knives made of carbon steels.

Ergonomic and solid handles for fatigue-free working: The shape of the Nesmuk handle is as aesthetic as it is practical. For the wooden handles, Nesmuk uses only the best, often hand-picked pieces of exquisite quality and certified origin. Each Nesmuk product is manufactured with the utmost care and precision and is tested several times during the elaborate manufacturing process before it leaves the factory. The elaborate craftsmanship of the finest materials does not serve an end in itself, but is the necessary consequence of the uncompromising demand for quality, attention to detail and functionality. With their blade geometry and extreme sharpness, Nesmuk knives are designed for so-called pressure cutting; the often common sawing movements are not required. We like to recommend "silent cutting", the thin blades are not suitable for hammering, chopping and knocking. This also protects the cutting edge and increases the service life of the knife. Avoid contact of the cutting edge with bones and frozen food.

Cutting Boards

Hard surfaces such as glass, granite or marble are very unsuitable and can quickly make a knife dull. Optimal cutting underlays are made of wood, in particular the forehead wood of southern German oak: This protects the finely ground blades, as you always cut into a bundle of fibres from above instead of cutting wood fibres. Thanks to the high content of natural tannic acid, oak wood is naturally antibacterial and meets high hygienic requirements.


Good knives never belong in the dishwasher; chemicals and salts attack the steel and cause chemical blunting. Nesmuk knives are best cleaned by hand with warm water; if necessary, detergents and a soft cloth can also be used. The knife should not be left in the water, especially with wooden handles, and should be dried immediately after cleaning.


Nesmuk knives should be stored in such a way that the blades cannot strike each other or come into contact with other hard objects. It is recommended to store the blades on a magnetic male connector or on a knife block. For storage in the kitchen drawer, the original box or a suitable leather sheath is recommended, whereby the knife should always be well dried.

Pflege Nesmuk SOUL

The blades are made of stainless niobium steel. In case of prolonged exposure to acidic food, a shadow may form on the blade. This is harmless to health and can be removed with a plaster stone, for example. To avoid this, clean and dry your SOUL knife immediately after use.

Pflege Nesmuk JANUS

The blades are made of stainless niobium steel. The black DLC (Diamond-like carbon) coating is an extremely hard amorphous carbon layer, only a few micrometers thick, which protects the blade from tarnishing. No special care is required. The cutting edge of all Nesmuk knives is of course always uncoated, so that it is recommended that the Nesmuk strops are kept clean.

Care of Nesmuk EXKLUSIV

Hand-forged damask knives usually require extensive care in order not to rust. All Nesmuk EXCLUSIVE knives are finished with the exclusive NPC coating (Nesmuk Protective Coating). NPC is a silicon layer only a few micrometers thick, which is applied using microwave-generated plasmas and permanently preserves the blade. No special care is required. The cutting edge of all Nesmuk knives is of course always uncoated, so that it is recommended that the Nesmuk strops are kept clean.


The wooden handles are best maintained through regular use. The handle cannot dry out as a result of hand grease and washing and over the years it has a warm silky shiny surface. Hardwoods with a high oil content do not require any special care. In the case of woods without a high fat content, an occasional treatment with e.g. camellia or tung oil is advantageous. Handles made of the plastics Juma, Micarta and piano lacquer do not require any special care. Handles made of silver and precious stones can be cleaned and polished occasionally if necessary. The clamps of all kitchen knives are made of stainless steel and require no special care.


The steels exclusively processed by Nesmuk guarantee extreme and long-lasting sharpness. To maintain and maintain this sharpness, we recommend the use of the Nesmuk stroking belt - it is very easy to use and lasts a maximum of two minutes. This ensures that the blade is kept sharp and permanently sharp when used regularly. In order to preserve the beauty and utility of your Nesmuk board for as long as possible, you should never clean it in the dishwasher but only by hand. The board should not be left in the water. After cleaning, the board should be dried well and stored in an airy and dry place. Wood is a natural, living material. Contact with water may cause the Nesmuk board to warp slightly. This should decrease after complete drying. However, slight warping does not reduce the quality. The tannic acid in oak wood can cause discolouration in the wood after prolonged contact with non-rust free metals. This is completely harmless from a food hygiene point of view. Nesmuk Care Wax Oil is recommended for the care of all Nesmuk boards. Made from pure vegetable oils, valuable natural resins and finest beeswax, it reduces the absorbency and solidifies the wood surface. Rough areas can be smoothed before oiling with the enclosed abrasive fleece or the rough side of a rinsing sponge.
